Mini Chocolate Cheesecakes
Time: 10 minutes
Who says you can’t have dessert when you’re worried about your waistline? This recipe is fast, easy, and only has a few calories (63 per cheesecake) to boot! Don’t worry, the portions are actually pretty generous. If you don’t want to spring for the slightly expensive chocolate wafers, you can always use low-fat chocolate graham crackers (that’s what I did!). If you want to add a bit of red flair, a halved strawberry in the middle would be divine.
Time: 10 minutes (ready in 2 hours)
This is a great versatile recipe for the beginner fancy-chocolate maker. The recipe is specifically for peppermint, but you can substitute cinnamon drops, nuts, dried fruit, etc. If you don’t want to have to worry about putting together the dessert that night, you can easily make it ahead of time and store it in an airtight container. This chocolate also makes a great gift to give your valentine!
Time: 20 minutes
If you’re an ice cream addict like my husband, you’re going to LOVE this! It’s a pretty simple recipe that yields amazing results. You simply saute a banana in rum, butter, brown sugar, and spices, then pour over ice cream. If you want to go for the gold, you can even light the pan on fire like the traditional recipe dictates. I wouldn’t recommend it if you’ve never had any experience with kitchen fires or have low ceilings.
Time: 2 hours
If you’ve never had pavlova, now is a perfect time to try. I labeled this recipe as medium difficulty, but it’s pretty simple as long as you know how to whip egg whites to stiff peaks. One trick that is not included in the recipe is to dust the parchment paper with corn starch. Trust me when I say that this is a very necessary step. If you forget this, you’ll be peeling parchment paper off the pavlova for 20 minutes. If you want the whipped cream topping to last longer, simply add a tablespoon of corn starch. Top with any fruit you like!
