Cajun Lobster Boil

WARNING: This is a recipe that I’m still working on.

Vegetables

  • 3-4 gallons water
  • Salt, to taste (seawater — approx 1/2 to 3/4 cup)
  • 5 lemons, quartered
  • 3 large onions, peeled and halved
  • 3 heads garlic, tops chopped off
  • 5 bay leaves
  • 6 oz Zatarain’s Liquid Crab Boil
  • 5 ears corn, cleaned and halved
  • 5 red potatoes, quartered
  • 2 links sausage (optional)

Lobsters

  • 2 beers
  • 6 oz Zatarain’s Liquid Crab Boil
  • Salt, to taste (seawater — approx 1/4 cup)
  • 4-6 lobsters
  1. Add salt, lemons, onions, garlic, bay leaves, and 6 oz Zatarain’s Crab Boil to water in a 5 gallon pot. Bring to boil. Add corn and potatoes. Once water resumes boil, boil for 15 minutes. Remove all ingredients from water and set aside to stay warm.
  2. Add enough salt to bring water back to seawater saltiness, beer, and 6oz of Zatarain’s Liquid Crab Boil to pot. Bring to boil. Add lobster and bring back to boil. Cook for 5-8 minutes (5 min for every 1lb-ish), then add ice to cool the water (you want the water hot like a hot bath). Let soak for 20-30 minutes, depending on the level of spice you want. Remove lobsters from water and serve.
